This quick and delicious southwestern style chicken salad is excellent to pair with fruit or crackers for a delicious Summer meal. This recipe makes six servings.

Ingredients

Chicken Salad
  • 1 cup cherry tomatoes, diced
  • 2 jalapeños, diced
  • 1/2 medium red onion, diced
  • 1 lb shredded chicken
  • 15 oz corn
  • 15 oz black beans (drained)
Dressing
  • 3/4 cup light mayo
  • 1/4 cup lime juice
  • 1 tbsp chili powder
  • 2 tbsp cumin
  • 1 tsp garlic powder
  • 2 tbsp paprika
  • 1/4 cup pepitas

Instructions

  1. Cook and shred chicken (recommend crock pot shredded chicken recipe).
  2. Dice and prep all veggies.
  3. Add all of the ingredients for the dressing into a large mixing bowl and stir until combined.
  4. Add the shredded chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas to the mixing bowl with the dressing.
  5. Stir to combine.
  6. Serve on its own, in a tortilla wrap, sandwich or over lettuce.
