This quick and delicious southwestern style chicken salad is excellent to pair with fruit or crackers for a delicious Summer meal. This recipe makes six servings.
Ingredients
Chicken Salad
- 1 cup cherry tomatoes, diced
- 2 jalapeños, diced
- 1/2 medium red onion, diced
- 1 lb shredded chicken
- 15 oz corn
- 15 oz black beans (drained)
Dressing
- 3/4 cup light mayo
- 1/4 cup lime juice
- 1 tbsp chili powder
- 2 tbsp cumin
- 1 tsp garlic powder
- 2 tbsp paprika
- 1/4 cup pepitas
Instructions
- Cook and shred chicken (recommend crock pot shredded chicken recipe).
- Dice and prep all veggies.
- Add all of the ingredients for the dressing into a large mixing bowl and stir until combined.
- Add the shredded chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas to the mixing bowl with the dressing.
- Stir to combine.
- Serve on its own, in a tortilla wrap, sandwich or over lettuce.
