This one skillet meal is colorful, quick, and delicious! This recipe makes four servings.

Ingredients

  • 14 oz chicken sausage, sliced (can swap with kielbasa or pork sausage)
  • 2 medium zucchini, sliced
  • 2 medium squash, sliced
  • 1/2 bunch asparagus sliced into thirds
  • 2 red bell pepper, diced
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp Cajun Seasoning

Instructions

  1. In a large bowl add the sliced sausage pieces, zucchini, squash, asparagus, bell pepper, olive oil, Cajun seasoning and pepper and toss until thoroughly combined.
  2. Add to a large skillet and turn to medium high.
  3. Cook for about 5-7 minutes until vegetables are tender.

Notes

Feel free to swap out veggies, add different seasonings, or even add peeled, deveined shrimp for a jambalaya inspired skillet!
