This one skillet meal is colorful, quick, and delicious! This recipe makes four servings.
Ingredients
- 14 oz chicken sausage, sliced (can swap with kielbasa or pork sausage)
- 2 medium zucchini, sliced
- 2 medium squash, sliced
- 1/2 bunch asparagus sliced into thirds
- 2 red bell pepper, diced
- 1 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp Cajun Seasoning
Instructions
- In a large bowl add the sliced sausage pieces, zucchini, squash, asparagus, bell pepper, olive oil, Cajun seasoning and pepper and toss until thoroughly combined.
- Add to a large skillet and turn to medium high.
- Cook for about 5-7 minutes until vegetables are tender.
Notes
Feel free to swap out veggies, add different seasonings, or even add peeled, deveined shrimp for a jambalaya inspired skillet!
