Easy meal prep recipe that minimizes dirty dishes and maximizes flavor. This recipe makes one serving.

Ingredients

  • 1/4 cup low-sodium chicken broth
  • One chicken breast cut into 1" pieces
  • 1 tsp garlic
  • 1/2 tsp paprika
  • 2 tbsp sweet chili sauce
  • 1 tsp lemon juice
  • 2 tbsp nonfat plain Greek yogurt
  • 1/4 cup diced bell pepper
  • 3 tbsp white rice
  • 1/2 tsp chili powder

Instructions

  1. Preheat oven to 375F.
  2. Dice peppers.
  3. Cut chicken into bite size pieces.
  4. In a medium sized mixing bowl, add chicken, garlic, paprika, chili powder, lemon juice, and half of the sweet chili sauce.
  5. In small, oven-safe, glass meal prep container, add rice, broth, yogurt, and mayo and mix thoroughly.
  6. Add veggies, chicken, and remaining sweet chili sauce on top.
  7. Bake for 35-40 minutes and enjoy!
