Easy meal prep recipe that minimizes dirty dishes and maximizes flavor. This recipe makes one serving.
Ingredients
- 1/4 cup low-sodium chicken broth
- One chicken breast cut into 1" pieces
- 1 tsp garlic
- 1/2 tsp paprika
- 2 tbsp sweet chili sauce
- 1 tsp lemon juice
- 2 tbsp nonfat plain Greek yogurt
- 1/4 cup diced bell pepper
- 3 tbsp white rice
- 1/2 tsp chili powder
Instructions
- Preheat oven to 375F.
- Dice peppers.
- Cut chicken into bite size pieces.
- In a medium sized mixing bowl, add chicken, garlic, paprika, chili powder, lemon juice, and half of the sweet chili sauce.
- In small, oven-safe, glass meal prep container, add rice, broth, yogurt, and mayo and mix thoroughly.
- Add veggies, chicken, and remaining sweet chili sauce on top.
- Bake for 35-40 minutes and enjoy!
