These delicious foil pack meals offer variety and can be cooked in the oven or on the grill. This recipe makes 6 servings.
Ingredients
- 1 lb kielbasa sausage
- 3 corn on the cob (small)
- 2 cups squash, sliced
- 2 cups zucchini, sliced
- 4 sweet pepper, diced
- 1 TB olive oil
- 4 tsp Italian seasoning
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
Instructions
- Preheat oven to 375F or grill to 500F.
- Lay 2 large pieces of foil out on a tray.
- Slice kielbasa into 1/2 inch rounds and squash and zucchini into 1/4 inch rounds.
- Dice bell peppers.
- Cut corn cobs in half.
- Toss kielbasa, veggies, olive oil, and seasoning in a bowl and stir until thoroughly coated.
- Divide the mixture between two foils, and place mixture in the middle of each foil.
- Fold the sides up and fold sides over (foil should look like a boat).
- Bake on a tray for 35-40 minutes.
- Or Grill for approximately 20 minutes, turning and checking regularly.
- Feel free to mix up the variety of vegetables, meats, and seasonings!
