These delicious foil pack meals offer variety and can be cooked in the oven or on the grill. This recipe makes 6 servings.

Ingredients

  • 1 lb kielbasa sausage
  • 3 corn on the cob (small)
  • 2 cups squash, sliced
  • 2 cups zucchini, sliced
  • 4 sweet pepper, diced
  • 1 TB olive oil
  • 4 tsp Italian seasoning
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 375F or grill to 500F.
  2. Lay 2 large pieces of foil out on a tray.
  3. Slice kielbasa into 1/2 inch rounds and squash and zucchini into 1/4 inch rounds.
  4. Dice bell peppers.
  5. Cut corn cobs in half.
  6. Toss kielbasa, veggies, olive oil, and seasoning in a bowl and stir until thoroughly coated.
  7. Divide the mixture between two foils, and place mixture in the middle of each foil.
  8. Fold the sides up and fold sides over (foil should look like a boat).
  9. Bake on a tray for 35-40 minutes.
  10. Or Grill for approximately 20 minutes, turning and checking regularly.
  11. Feel free to mix up the variety of vegetables, meats, and seasonings!
