This twist on a street food favorite packs so much flavor with minimal calories or effort!
Ingredients
- 1 cup white rice
- 1 cup cauliflower rice
- 12 oz. Bird's Eye Fire Roasted Corn (frozen bag)
- 2 cups Chicken Tinga
- 4 TB cilantro lime crema
- 4 TB queso fresco (or feta)
- 1 lime
- 4 TB tajin seasoning
Instructions
Meal Prep Bowls
- Prepare white rice per package instructions.
- Prepare cauliflower rice per package instructions.
- Prepare Chicken Tinga per attached link.
- Combine white rice and cauliflower rice and mix thoroughly.
- Divide rice mixture evenly between 4 meal prep containers.
- Divide shredded Chicken Tinga evenly between all 4 containers.
- Divide the fire roasted corn mixture evenly between all 4 containers (these can be added frozen and will cook during reheat).
- Top with tajin seasoning, crumbled queso fresco, cilantro lime crema, and serve each bowl with a lime wedge.
