This twist on a street food favorite packs so much flavor with minimal calories or effort!

Ingredients

  • 1 cup white rice
  • 1 cup cauliflower rice
  • 12 oz. Bird's Eye Fire Roasted Corn (frozen bag)
  • 2 cups Chicken Tinga
  • 4 TB cilantro lime crema
  • 4 TB queso fresco (or feta)
  • 1 lime
  • 4 TB tajin seasoning

Instructions

Meal Prep Bowls
  1. Prepare white rice per package instructions.
  2. Prepare cauliflower rice per package instructions.
  3. Prepare Chicken Tinga per attached link.
  4. Combine white rice and cauliflower rice and mix thoroughly.
  5. Divide rice mixture evenly between 4 meal prep containers.
  6. Divide shredded Chicken Tinga evenly between all 4 containers.
  7. Divide the fire roasted corn mixture evenly between all 4 containers (these can be added frozen and will cook during reheat).
  8. Top with tajin seasoning, crumbled queso fresco, cilantro lime crema, and serve each bowl with a lime wedge.
