This comfort food meal prep is full of flavor and protein. This recipe makes four servings.
Ingredients
- 1/2 cup white rice
- 1 cup cauliflower rice
- 4 large eggs
- 1 TB olive oil
- 2 cloves garlic, minced
- 2 cups frozen vegetables
- 1/4 cup brown sugar
- 1/4 cup reduced sodium soy sauce
- 1 TB ginger
- 2 tsp sesame oil
- 1/2 tsp Sriracha
- 1 lb lean ground beef
- 2 green onions, thinly sliced
- 1/4 tsp sesame seeds
Instructions
- Cook rice according to package instructions.
- Cook cauliflower rice according to package instructions.
- Mix rice and cauliflower rice together.
- Cook frozen vegetables according to package instructions (or leave frozen if meals will be reheated).
- Bring water to boil in a small pot, gently add eggs, and cook for 5-6 minutes. Once complete, rinse eggs with cold water, peel, and slice in half.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and sriracha.
- Heat olive oil in a large skillet over medium high heat.
- Add garlic and cook, stirring constantly, until fragrant, about 1 minute.
- Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- To plate, evenly divide rice mixture, eggs, vegetables and ground beef mixture, garnish with green onion and sesame seeds (optional).
