Ingredients

  • 1 lb chicken breasts, diced
  • 10 oz Barilla protein pasta
  • 1/2 cup jarred pesto
  • 1 medium zucchini, thinly sliced
  • 1 medium squash, thinly sliced
  • 4 plum tomatoes, diced
  • 2 cloves garlic minced
  • 1 red onion, diced
  • 2 cups spinach, chopped

Instructions

  1. Cook pasta according to package instructions, reserving 1/2 cup of pasta water.
  2. Meanwhile, heat olive oil in a large pan, then add chicken and cook for 2-3 minutes until golden, seasoning with salt and pepper.
  3. Add tomatoes, zucchini, red onion and garlic.
  4. Saute for 5 minutes until veggies have softened.
  5. Add pasta back to pot, along with chicken and veggies.
  6. Then add pasta water and pesto, stirring well to coat.
  7. Stir in chopped spinach and remove from heat once wilted.
