- 1 lb chicken breasts, diced
- 10 oz Barilla protein pasta
- 1/2 cup jarred pesto
- 1 medium zucchini, thinly sliced
- 1 medium squash, thinly sliced
- 4 plum tomatoes, diced
- 2 cloves garlic minced
- 1 red onion, diced
- 2 cups spinach, chopped
Instructions
- Cook pasta according to package instructions, reserving 1/2 cup of pasta water.
- Meanwhile, heat olive oil in a large pan, then add chicken and cook for 2-3 minutes until golden, seasoning with salt and pepper.
- Add tomatoes, zucchini, red onion and garlic.
- Saute for 5 minutes until veggies have softened.
- Add pasta back to pot, along with chicken and veggies.
- Then add pasta water and pesto, stirring well to coat.
- Stir in chopped spinach and remove from heat once wilted.
