- 2 oz unsalted butter
- 4 large carrots, diced
- 2 yellow onions, diced
- 84 oz whole tomatoes, crushed (3 28oz cans)
- 4 cups low-sodium chicken stock
- 1/4 tsp baking soda
- 1 cup Fairlife skim milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cayenne
Instructions
- In a 6 or 8 quart pot, melt butter over medium heat,then add carrots and onions.
- Cook, stirring occasionally until butter starts to brown on the bottom, about 10-12 minutes.
- Add tomatoes and chicken stock.
- Continue cooking over a low heat, stirring occasionally, until quite thick, about 60-90 minutes and adjust heat as needed to maintain a gentle simmer.
- If the soup tastes too acidic, add 1/4 teaspoon baking soda and stir.
- Taste and repeat if needed.
- Purée soup with an immersion blender until smooth, or cool until no longer steaming before puréeing in a countertop blender.
- Stir in Fairlife milk, then season with salt, pepper, and cayenne.
