Ingredients

  • 2 oz unsalted butter
  • 4 large carrots, diced
  • 2 yellow onions, diced
  • 84 oz whole tomatoes, crushed (3 28oz cans)
  • 4 cups low-sodium chicken stock
  • 1/4 tsp baking soda
  • 1 cup Fairlife skim milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cayenne

Instructions

  1. In a 6 or 8 quart pot, melt butter over medium heat,then add carrots and onions.
  2. Cook, stirring occasionally until butter starts to brown on the bottom, about 10-12 minutes.
  3. Add tomatoes and chicken stock.
  4. Continue cooking over a low heat, stirring occasionally, until quite thick, about 60-90 minutes and adjust heat as needed to maintain a gentle simmer.
  5. If the soup tastes too acidic, add 1/4 teaspoon baking soda and stir.
  6. Taste and repeat if needed.
  7. Purée soup with an immersion blender until smooth, or cool until no longer steaming before puréeing in a countertop blender.
  8. Stir in Fairlife milk, then season with salt, pepper, and cayenne.
  9. Serve and enjoy!
