This tasty casserole is filled with protein and veggies! This recipe makes six servings (one serving = 10 oz or 270g bowl).

Ingredients

  • 1 TB olive oil
  • 1 garlic clove, minced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 15 oz black beans canned, drained and rinsed
  • 1 TB taco seasoning
  • 4 large Carb Mission tortillas
  • 2 cups Chicken Tinga
  • 1 cup low fat Fiesta shredded cheese
  • 1 cup enchilada sauce
  • green onion, chopped (optional)

Instructions

  1. Preheat oven to 375F and spray a 9 x 13 oven safe casserole dish with cooking spray.
  2. In a skillet, heat olive oil over medium-high heat.
  3. Add garlic for 1 minute, then add onion and bell peppers.
  4. Cook 3-5 minutes or until soft.
  5. Add black beans and taco seasoning and toss to warm.
  6. Remove from heat.
  7. Lay 2 tortillas on the bottom of the greased baking dish.
  8. Spread half of the bean mixture, chicken, enchilada sauce, and cheese over top.
  9. Start another layer of tortillas and repeat the layering, finishing with a nice thick layer of shredded cheese.
  10. Cover with foil and bake for 15 minutes, then remove foil and bake for another 5 minutes or until the cheese is melted.
  11. Let cool and top with chopped green onion.
