This easy crockpot recipe can be enjoyed as veggie only or with beef, pork, or turkey added. This recipe makes 8 servings (one serving = 360g or 1 1/2 cup bowl of soup).

Ingredients

  • 2 lb lean ground beef
  • 1 onion, diced
  • 24 oz pasta sauce
  • 8 oz low sodium vegetable broth
  • 8 oz water
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can Ro-Tel
  • 2 tbsp low sodium ketchup
  • 2 russet potatoes, peeled and diced
  • 20 oz frozen vegetables
  • 3 tsp Worcestershire sauce
  • 2 tbsp Italian seasoning
  • 2 tsp red pepper flakes
  • 1 tsp black pepper

Instructions

  1. Cook the ground meat and diced onion in a large skillet on medium heat.
  2. Drain any grease and transfer mixture to a slow cooker (crockpot).
  3. Add all sauces, vegetables, seasonings, and remaining ingredients to the crockpot and stir together.
  4. Cover and cook on low for 6-8 hours or High for 5-6 hours.
  5. Serve one cup of soup with either crackers, sour cream or shredded cheese as topping.

Notes

OPTIONAL: add crackers, sour cream, or shredded cheddar cheese

SWAP: ground beef for ground turkey or ground pork
