This easy recipe adds a ton of flavor to the boring chicken and rice meal prep! This recipe makes 4 servings (one serving = 400g or 1 1/2 cup serving)

Ingredients

  • 1 1/2 lbs skinless chicken breasts, cubed
  • 1 cup cooked rice
  • 1 cup cooked cauliflower rice
  • 1 1/2 cup broccoli florets
  • 1 red onion, diced
  • 2 cup plum tomatoes, thinly sliced
  • 2 zucchini, diced
  • 1/2 tsp pepper
  • 2 tbsp basil
  • 2 tbsp rosemary
  • 2 tbsp thyme
  • 1 tbsp paprika
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Cook rice according to package directions and set aside.
  2. Pre-heat oven to 450F. Line a baking sheet with aluminum foil and set aside.
  3. In a small bowl, mix all seasonings together.
  4. Place the chicken and veggies in the baking dish.
  5. Sprinkle all the spices and garlic evenly over the chicken and veggies.
  6. Drizzle with the olive oil.
  7. Bake for 15-20 minutes until chicken is cooked, and veggies are slightly charred.
  8. Broil 1-2 minutes to brown chicken.
  9. Divide chicken and veggies evenly for four servings (recommend adding 1/4 cup cooked white rice for a full and well-balanced meal).
