This easy recipe adds a ton of flavor to the boring chicken and rice meal prep! This recipe makes 4 servings (one serving = 400g or 1 1/2 cup serving)
Ingredients
- 1 1/2 lbs skinless chicken breasts, cubed
- 1 cup cooked rice
- 1 cup cooked cauliflower rice
- 1 1/2 cup broccoli florets
- 1 red onion, diced
- 2 cup plum tomatoes, thinly sliced
- 2 zucchini, diced
- 1/2 tsp pepper
- 2 tbsp basil
- 2 tbsp rosemary
- 2 tbsp thyme
- 1 tbsp paprika
- 2 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- Cook rice according to package directions and set aside.
- Pre-heat oven to 450F. Line a baking sheet with aluminum foil and set aside.
- In a small bowl, mix all seasonings together.
- Place the chicken and veggies in the baking dish.
- Sprinkle all the spices and garlic evenly over the chicken and veggies.
- Drizzle with the olive oil.
- Bake for 15-20 minutes until chicken is cooked, and veggies are slightly charred.
- Broil 1-2 minutes to brown chicken.
- Divide chicken and veggies evenly for four servings (recommend adding 1/4 cup cooked white rice for a full and well-balanced meal).
