This easy meal prep makes quick and easy mini versions of a fan favorite! This recipe makes 12 mini pizzas (one serving = 3 mini pizzas).

Ingredients

  • 6 whole wheat English muffins
  • 6 tbsp pizza sauce
  • 8 oz low fat mozzarella cheese
  • 2 oz low fat sliced mini pepperonis

Instructions

  1. Preheat the oven to 400F, or use a small toaster oven.
  2. Cut your English muffins in half and lay them on a baking sheet, cut side up.
  3. Add 1 tablespoon of sauce to each mini pizza crust.
  4. Then top with a big pinch of mozzarella cheese.
  5. Next, load each mini pizza with your favorite toppings.
  6. Finally, add another tiny sprinkle of cheese to hold everything together after it’s melty.
  7. Bake for 5-7 minutes, OR toss them in your (not preheated) toaster oven
  8. and bake at 400F for 9-10 minutes.
  9. Let the mini pizzas cool completely, then portion into airtight containers (3 pizzas per container) and store in the fridge.
  10. To reheat: Place in a toaster oven and bake at 400F for 4-5 minutes until the cheese is melty; or microwave for 30 seconds (may get soggy this way).
  11. These are also very delicious cold!

Notes

Peppery Pepperoni: green bell pepper (chopped) & pepperonis (cut in half)

Total Veggie: carrots (shredded), bell pepper (chopped), spinach leaves (chopped), &

mushroom (sliced & chopped)

Meaty Pineapple: chopped meat (sausage, bacon, etc.)& pineapple chunks (drained,

chopped)

Shroomy Spinach: spinach leaves (chopped) & mushrooms (sliced & chopped)
