This easy meal prep makes quick and easy mini versions of a fan favorite! This recipe makes 12 mini pizzas (one serving = 3 mini pizzas).
Ingredients
- 6 whole wheat English muffins
- 6 tbsp pizza sauce
- 8 oz low fat mozzarella cheese
- 2 oz low fat sliced mini pepperonis
Instructions
- Preheat the oven to 400F, or use a small toaster oven.
- Cut your English muffins in half and lay them on a baking sheet, cut side up.
- Add 1 tablespoon of sauce to each mini pizza crust.
- Then top with a big pinch of mozzarella cheese.
- Next, load each mini pizza with your favorite toppings.
- Finally, add another tiny sprinkle of cheese to hold everything together after it’s melty.
- Bake for 5-7 minutes, OR toss them in your (not preheated) toaster oven
- and bake at 400F for 9-10 minutes.
- Let the mini pizzas cool completely, then portion into airtight containers (3 pizzas per container) and store in the fridge.
- To reheat: Place in a toaster oven and bake at 400F for 4-5 minutes until the cheese is melty; or microwave for 30 seconds (may get soggy this way).
- These are also very delicious cold!
Notes
Peppery Pepperoni: green bell pepper (chopped) & pepperonis (cut in half)
Total Veggie: carrots (shredded), bell pepper (chopped), spinach leaves (chopped), &
mushroom (sliced & chopped)
Meaty Pineapple: chopped meat (sausage, bacon, etc.)& pineapple chunks (drained,
chopped)
Shroomy Spinach: spinach leaves (chopped) & mushrooms (sliced & chopped)
