This delicious stuffed pepper recipe adds a twist to an old favorite with tons of options to add more flavor and fun! This recipe makes 4 servings (one serving = two halves of a bell pepper stuffed)

Ingredients

  • 1 lb lean ground beef
  • 1/2 onion, diced
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 6 oz tomato sauce
  • 1 tbsp taco seasoning
  • 6 oz black beans (drained)
  • 6 oz corn
  • 6 oz white rice
  • 4 oz shredded cheddar cheese
  • 4 bell peppers, halved & deseeded
  • 1 tsp salt
  • 1 tsp black pepper
Optional
  • SWAP beef for ground pork, ground turkey, or ground chicken
  • sour cream
  • cilantro

Instructions

  1. Prepare rice per package instructions.
  2. Wash, halve, and deseed bell peppers.
  3. Preheat oven to 350F.
  4. Add olive oil to a large skillet over medium heat.
  5. Add ground meat, garlic, and onions - cooking for 8-10 minutes.
  6. Once the meat is cooked through, add the tomato sauce, all spices, black beans, corn, and rice to the skillet.
  7. Decrease to low heat, stir, and allow the mixture to simmer for 2-3 minutes.
  8. Stuff each pepper with filling (~3/4 cup of filling per pepper).
  9. Add shredded cheese to top of each pepper and align all peppers in an oven-safe, greased casserole dish.
  10. Bake peppers for 18-22 minutes or until cheese on top is bubbly and melted through.
  11. Peppers should be soft enough to cut with a fork.
  12. Serve two halves of a pepper with extra shredded cheese, sour cream or cilantro for topping.
