This delicious meal prep recipe is high protein and low carb while still full of flavor! This recipe makes 4 servings (one serving = 4 chicken breast + toppings).

Ingredients

  • 4 chicken breasts
  • 1 tbsp Italian seasoning
  • 1 tsp black pepper
  • 1 cup pizza sauce
  • 3/4 cup low fat shredded mozzarella cheese
  • 1⁄ 2 cup Canadian bacon, chopped
  • 1⁄ 2 cup pineapple chunks

Instructions

  1. Preheat oven to 425F.
  2. Season both sides of each chicken breast with pepper and Italian seasoning.
  3. Spray an oven safe casserole dish with cooking spray and add chicken breasts in a thin layer.
  4. Bake chicken for 15 minutes.
  5. Top chicken breasts with pizza sauce, shredded mozzarella, ham and pineapple.
  6. Return to oven to bake for another 10 minutes, until the cheese is starting to brown and bubble.
  7. Serve with steamed broccoli other vegetable for a delicious low carb meal.
  8. All toppings can be swapped out for your favorite pizza toppings (mushrooms, sausage, peppers, olives, etc.).
