This delicious meal prep recipe is high protein and low carb while still full of flavor! This recipe makes 4 servings (one serving = 4 chicken breast + toppings).
Ingredients
- 4 chicken breasts
- 1 tbsp Italian seasoning
- 1 tsp black pepper
- 1 cup pizza sauce
- 3/4 cup low fat shredded mozzarella cheese
- 1⁄ 2 cup Canadian bacon, chopped
- 1⁄ 2 cup pineapple chunks
Instructions
- Preheat oven to 425F.
- Season both sides of each chicken breast with pepper and Italian seasoning.
- Spray an oven safe casserole dish with cooking spray and add chicken breasts in a thin layer.
- Bake chicken for 15 minutes.
- Top chicken breasts with pizza sauce, shredded mozzarella, ham and pineapple.
- Return to oven to bake for another 10 minutes, until the cheese is starting to brown and bubble.
- Serve with steamed broccoli other vegetable for a delicious low carb meal.
- All toppings can be swapped out for your favorite pizza toppings (mushrooms, sausage, peppers, olives, etc.).
