This deliciously crisp summer meal is not only light but also refreshing! This recipe makes 8 servings (one serving = 175g or 3/4 cup of chicken salad).

Ingredients

  • 4 cups shredded chicken
  • 2 apples, diced
  • 3 celery stalk, diced
  • 1/2 cup pecans, chopped
  • 1/2 cup dried cranberries
  • 1 cup light mayo
  • 2 tbsp lemon juice
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Shred cooked chicken.
  2. Dice apples and celery.
  3. Chop pecans.
  4. In a large mixing bowl, mix together the mayo, lemon juice, sugar, salt and pepper.
  5. Add shredded chicken, apple, celery, cranberries, and pecans to mixing bowl.
  6. Stir vigorously.
To Serve
  1. Serve 3/4 cup of chicken salad on multi-grain bread, lettuce wrap, tortilla wrap, or with veggies and chips for dipping.
  2. SWAP pecans for walnuts/almonds
  3. SWAP quartered grapes for diced apples
  4. SWAP cranberries for raisins
  5. *Can also be served with a side of fruit, chips, etc. as a Bento Box!
