This deliciously crisp summer meal is not only light but also refreshing! This recipe makes 8 servings (one serving = 175g or 3/4 cup of chicken salad).
Ingredients
- 4 cups shredded chicken
- 2 apples, diced
- 3 celery stalk, diced
- 1/2 cup pecans, chopped
- 1/2 cup dried cranberries
- 1 cup light mayo
- 2 tbsp lemon juice
- 1 tbsp sugar
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Shred cooked chicken.
- Dice apples and celery.
- Chop pecans.
- In a large mixing bowl, mix together the mayo, lemon juice, sugar, salt and pepper.
- Add shredded chicken, apple, celery, cranberries, and pecans to mixing bowl.
- Stir vigorously.
To Serve
- Serve 3/4 cup of chicken salad on multi-grain bread, lettuce wrap, tortilla wrap, or with veggies and chips for dipping.
- SWAP pecans for walnuts/almonds
- SWAP quartered grapes for diced apples
- SWAP cranberries for raisins
- *Can also be served with a side of fruit, chips, etc. as a Bento Box!
