This easy meal prep adds a twist to an American favorite - the cheeseburger! This recipe makes 8 bowls (one serving = 250g or 8 oz bowl).

Ingredients

  • 2 cup cooked white rice
  • 1 cup cooked cauliflower rice
  • 1.5 lbs lean ground beef
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 2 tbsp low sodium ketchup
  • 1 pickle, sliced
  • 1 onion, diced
  • 2 red tomatoes, diced
  • 6 oz shredded cheddar cheese

Instructions

  1. Cook rice according to package instructions.
  2. Cook cauliflower rice according to package instructions.
  3. Thoroughly mix rice and cauliflower rice together.
  4. Add diced onion to a medium skillet over medium heat and cook until translucent.
  5. Set onions aside.
  6. Add ground meat to the same medium skillet over medium heat and cook thoroughly.
  7. Add brown sugar and apple cider vinegar to skillet.
  8. Mix thoroughly and then add ketchup.
  9. Add onions back to skillet and mix thoroughly again.
To Serve
  1. For each plate, divide rice and meat, and top with pickles, tomatoes, shredded cheese, and any other of popular cheeseburger topping!
