This easy meal prep adds a twist to an American favorite - the cheeseburger! This recipe makes 8 bowls (one serving = 250g or 8 oz bowl).
Ingredients
- 2 cup cooked white rice
- 1 cup cooked cauliflower rice
- 1.5 lbs lean ground beef
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 2 tbsp low sodium ketchup
- 1 pickle, sliced
- 1 onion, diced
- 2 red tomatoes, diced
- 6 oz shredded cheddar cheese
Instructions
- Cook rice according to package instructions.
- Cook cauliflower rice according to package instructions.
- Thoroughly mix rice and cauliflower rice together.
- Add diced onion to a medium skillet over medium heat and cook until translucent.
- Set onions aside.
- Add ground meat to the same medium skillet over medium heat and cook thoroughly.
- Add brown sugar and apple cider vinegar to skillet.
- Mix thoroughly and then add ketchup.
- Add onions back to skillet and mix thoroughly again.
To Serve
- For each plate, divide rice and meat, and top with pickles, tomatoes, shredded cheese, and any other of popular cheeseburger topping!
