This delicious and easy recipe is an excellent and quick family dinner or a tasty lunch meal prep. This recipe makes eight enchiladas (one serving = one enchilada).

Ingredients

  • 1 lb taco meat
  • 1 cup onion, diced
  • 1 cup shredded Mexican cheese
  • 1 (10 oz) can red enchilada sauce
  • 8 Carb Mission Balance tortillas

Instructions

  1. Prior to starting, prepare taco meat and cook accordingly.
  2. Preheat the oven to 375F.
  3. Dice onion and sauté in 2 tbsp water.
  4. Spray a 9×13-inch oven-safe casserole dish with cooking spray and set aside.
  5. In a medium bowl, mix to combine taco meat, onion and 1/2 cup of cheese.
  6. Lay out all tortillas on a clean, flat surface and scoop the mixture evenly
  7. among all tortillas (about 1/3 cup in each tortilla).
  8. Roll each tortilla and place side by side in the casserole dish.
  9. Pour enchilada sauce on top of enchiladas.
  10. Sprinkle with remaining cheese.
  11. Bake for 16-22 minutes or until the cheese is melted and bubbly.
