This delicious and easy recipe is an excellent and quick family dinner or a tasty lunch meal prep. This recipe makes eight enchiladas (one serving = one enchilada).
Ingredients
- 1 lb taco meat
- 1 cup onion, diced
- 1 cup shredded Mexican cheese
- 1 (10 oz) can red enchilada sauce
- 8 Carb Mission Balance tortillas
Instructions
- Prior to starting, prepare taco meat and cook accordingly.
- Preheat the oven to 375F.
- Dice onion and sauté in 2 tbsp water.
- Spray a 9×13-inch oven-safe casserole dish with cooking spray and set aside.
- In a medium bowl, mix to combine taco meat, onion and 1/2 cup of cheese.
- Lay out all tortillas on a clean, flat surface and scoop the mixture evenly
- among all tortillas (about 1/3 cup in each tortilla).
- Roll each tortilla and place side by side in the casserole dish.
- Pour enchilada sauce on top of enchiladas.
- Sprinkle with remaining cheese.
- Bake for 16-22 minutes or until the cheese is melted and bubbly.
