Chicken Bacon Ranch Quesadillas

Ingredients

  • 1 lb ground chicken
  • 6 slices bacon, cut into strips
  • 2 Tbsp ranch seasoning
  • 6 oz shredded cheddar cheese
  • 8 Carb Mission Balance tortillas

Instructions

  1. Cook bacon in a large skillet over medium-high heat (or in air fryer if preferred).
  2. Once cooked, transfer the cooked bacon to a paper towel and drain the remaining grease.
  3. Add the ground chicken and cook for 5-7 minutes (until thoroughly cooked).
  4. Add the ranch seasoning and bacon pieces back to the cooked ground chicken.
  5. Continue to cook and stir until the seasoning has coated the chicken and bacon.
  6. Set chicken mixture aside.
  7. Place the same skillet or a large griddle over medium-low heat and spray with cooking spray.
  8. Add tortilla to the center of the skillet and place 1 tbsp of cheese, followed by a scoop of the ground chicken mixture and another 1 tbsp of cheese.
  9. Use a spatula to fold the tortilla in half, pressing down on the top with the flat end of the spatula.
  10. Cook for another 1-2 minutes per side until golden brown (decrease the heat if your tortillas are browning too quickly).
