This chicken and rice bowl plays on the Philly cheesesteak but low in fat and high is flavor! This recipe makes 4 servings (one serving = 300g or 1 1/3 cup bowl).

Ingredients

  • 1 lb ground chicken
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tsp onion powder
  • 1⁄ 2 tsp black pepper
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tsp Italian seasoning
  • 1 1/2 cups white rice
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook rice according to package directions.
  2. Heat up a large skillet over medium high heat and spray with cooking spray.
  3. Add ground chicken, 1/2 tsp black pepper, 1 tsp onion powder, and 2 cloves minced garlic.
  4. Sauté for 5-7 minutes.
  5. Remove and set aside.
  6. In the same pan, add peppers, and onions along with the remaining garlic, onion powder, Italian seasoning and soy sauce (add more cooking spray if needed).
  7. Sauté 7-9 minutes or until softened.
  8. Add the chicken back in and stir.
  9. Divide the cooked rice between 4 meal prep containers and top with the meat and veggie mixture.
  10. Top with shredded cheese.
Chicken Philly Skillet Option
  1. If you are not making meal prep containers, feel free to just add the cup of shredded cheese on top of the cooked meat and veggies when they are in the skillet.
  2. Cover and let it melt over low heat for a few minutes. Serve over rice and enjoy!

Notes

Optional: Add 8 oz mushrooms or any other preferred veggies!
