This delicious breakfast casserole is delicious, hearty, and easy to prep! This recipe makes eight servings (One serving = 250g or 8 oz).

Ingredients

  • 1 lb ground turkey sausage
  • 3 cups egg whites
  • 5 everything bagels
  • 8 oz Fairlife skim milk
  • 10 oz can Ro-Tel
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 350F and spray a 9x11 oven-safe casserole dish with cooking spray.
  2. Cook the ground turkey sausage in a skillet on medium heat.
  3. Whisk together eggs, milk, and all seasonings.
  4. Shred bagels into bite-sized pieces and cover bottom of baking dish.
  5. Then top with turkey sausage (drain any excess grease first if needed).
  6. Top with egg mixture and Ro-Tel.
  7. Bake at 350F for 45 minutes (covered with foil).
  8. Serve immediately or let cool and then divide into 8 meal prep containers.

Notes

Optional Addition - 8 oz shredded cheese

NOTE: If you choose to top with shredded cheese, bake casserole for 35 minutes covered, remove from oven, uncover, add cheese evenly across the top and then bake for an additional 10 minutes (uncovered).
