This delicious breakfast quesadilla is delicious, versatile and easy to prep! This recipe makes 5 quesadillas (one serving = one quesadilla).

Ingredients

  • 1 cup chopped ham
  • 1 yellow onion, diced
  • 1 bell pepper, diced
  • 1 cup shredded reduced-fat cheddar cheese
  • 5 Carb Mission low carb tortillas
  • 2 egg
  • 1/2 cup egg whites
  • 1 cup Fairlife milk
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 350F.
  2. Lightly spray an 8×8-inch oven safe casserole dish with cooking spray.
  3. In a medium bowl, mix together ham, onion, pepper, and 1/2 of the shredded cheese.
  4. Divide the ham mixture and add 1/5 of the mixture to the center of each tortilla; roll up and place seam side down in baking dish.
  5. In another large bowl, beat eggs, milk, and paprika.
  6. Pour over egg mixture over the tortillas in the casserole dish.
  7. Cover with foil and bake immediately or refrigerate overnight for a make-ahead breakfast.
  8. Sprinkle any extra ham and cheese on top of the enchiladas.
  9. Bake for 30 minutes covered.
  10. Remove enchiladas from the oven and top with cheese.
  11. Remove foil and cook for 5 additional minutes or until the cheese has melted.
