This delicious breakfast quesadilla is delicious, versatile and easy to prep! This recipe makes 5 quesadillas (one serving = one quesadilla).
Ingredients
- 1 cup chopped ham
- 1 yellow onion, diced
- 1 bell pepper, diced
- 1 cup shredded reduced-fat cheddar cheese
- 5 Carb Mission low carb tortillas
- 2 egg
- 1/2 cup egg whites
- 1 cup Fairlife milk
- 1 teaspoon paprika
Instructions
- Preheat oven to 350F.
- Lightly spray an 8×8-inch oven safe casserole dish with cooking spray.
- In a medium bowl, mix together ham, onion, pepper, and 1/2 of the shredded cheese.
- Divide the ham mixture and add 1/5 of the mixture to the center of each tortilla; roll up and place seam side down in baking dish.
- In another large bowl, beat eggs, milk, and paprika.
- Pour over egg mixture over the tortillas in the casserole dish.
- Cover with foil and bake immediately or refrigerate overnight for a make-ahead breakfast.
- Sprinkle any extra ham and cheese on top of the enchiladas.
- Bake for 30 minutes covered.
- Remove enchiladas from the oven and top with cheese.
- Remove foil and cook for 5 additional minutes or until the cheese has melted.
