This delicious breakfast quesadilla is delicious, versatile and easy to prep!This recipe makes 4 quesadillas (one serving = 1 quesadilla).

Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup ham, diced
  • 1/2 cup onion, diced
  • 1 bell pepper, diced
  • 4 large eggs, lightly beaten
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 4 Low Carb tortilla
  • 1⁄ 2 cup shredded reduced fat cheddar cheese

Instructions

  1. Preheat oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. Heat olive oil in a large skillet over medium high heat.
  4. Add garlic, onion, and bell pepper and cook, stirring frequently, until fragrant, about 1 minute.
  5. Stir in ham and continue to cook, about 3-4 minutes.
  6. Add whisked eggs to the skillet and cook, stirring gently until they just begin to set; season with salt, pepper, and paprika to taste.
  7. Continue cooking until thickened and no visible liquid remains, about 5-6 minutes.
  8. Layer half of each tortilla with the egg mixture; sprinkle with cheese.
  9. Fold in half and place onto the prepared baking sheet.
  10. Place into oven and bake until the cheese has melted, about 5-6 minutes.
  11. Let cool 2-3 minutes, slice into quarters and serve.

Notes

Quesadillas can be served cold or reheated in air fryer or microwave. Serve with salsa, sour cream, or Mexican crema.

This meal is very versatile and the breakfast meat, veggies, and cheese can all be swapped. Recommend serving with a side of fruit!
