These hearty breakfast bowls are delicious and reheat very well.This recipe makes 5 servings (one serving = 375g or 1 1/2 cups).

Ingredients

Potatoes
  • 1 tbsp olive oil
  • 2 potatoes, diced
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/4 tsp pepper
Sausage
  • 12 maple breakfast turkey sausage links
Eggs
  • 4 cups egg whites
  • 1 tsp paprika
  • 1 tsp pepper

Instructions

  1. Preheat oven to 425F.
  2. Add potatoes to a parchment-lined baking sheet.
  3. Drizzle with olive oil, then season with paprika, onion powder, salt & pepper.
  4. Toss to combine, then roast for 25 minutes.
  5. After 25 minutes, add bell pepper and onions to the baking sheet.
  6. Toss to combine and flip the potatoes, then roast for an additional 15 minutes.
  7. Meanwhile, heat a medium-sized skillet over medium heat.
  8. Add cooking spray, then sausages.
  9. Cook for 8-10 minutes until fully cooked through, then let rest for 5 minutes before slicing up.
  10. While sausages are cooking, whisk eggs in a large bowl and season with salt and pepper.
  11. Heat a medium-sized skillet over medium heat and spray with cooking spray.
  12. Add eggs and scramble until there is no liquid left in the pan.
  13. Immediately remove from heat and distribute among 4 bowls.
  14. Divide sausages and potatoes among bowls with eggs.
