Customizable Breakfast Burritos that freeze well and reheat deliciously from oven or air fryer! This recipe makes 8 burritos (one serving = one burrito).
Ingredients
- 8 eggs
- 6 egg whites
- 1 lb lean turkey sausage
- 8 Carb Balance tortillas
- 8 oz shredded cheddar cheese
- 1/2 onion, diced
- 1/4 cup chopped bell pepper
- 1 tsp salt
- 1 tsp pepper
- 2 tsp paprika
Instructions
- Cook turkey sausage over medium heat in a large skillet.
- Once cooked through, add veggies, decrease heat to low-medium and cook for 3-4 more minutes.
- Whisk together eggs, egg whites, and all seasoning in one bowl.
- Add egg mixture to pan with meat and stir until eggs are cooked through, stir frequently and once cooked through, turn off the heat and allow egg mixture to cool completely.
- Separate tortillas and microwave each one individually in a wet paper towel.
- Lay tortillas out on a clean, flat surface.
- Divide shredded cheese and egg mixture among all tortillas (make sure there is no liquid in egg mixture).
- Fold into burritos and wrap in aluminum foil until ready to cook. Keep stored in an air tight container.
To Reheat
- If frozen, defrost burritos overnight before reheating.
- To reheat from oven: 10-15 min. at 350F.
- To reheat from air fryer: 4-6 min. at 375F.
