This delicious breakfast scramble is filled with protein and can help kickstart a healthy day! This recipe makes 8 bowls (one serving = 250g or 8 oz).

Ingredients

  • 1 lb ground turkey sausage
  • 1 medium onion, diced
  • 2 medium bell peppers, diced
  • 16 oz frozen hash browns
  • 8 large eggs
  • 4 oz shredded cheddar cheese
  • 1 tsp salt
  • 1 tbsp paprika
  • 1 tsp black pepper

Instructions

  1. Cook hash browns according to bag instructions.
  2. Cook the ground turkey sausage and diced onion in a large skillet on medium heat.
  3. Add bell peppers once the sausage has browned and cook another 3-4 minutes.
  4. Remove sausage and veggie mixture and set aside.
  5. In a large mixing bowl, add all eggs and seasonings, mix thoroughly and add to large skillet over medium heat.
  6. Scramble.
  7. Once complete, add sausage and veggie mixture.
  8. Once all ingredients, are cooked, mix all ingredients together, divide between 8 bowls and top with shredded cheese.
  9. Serve with salsa or a side of yogurt.

Notes

SWAP the hash browns for diced roasted sweet potatoes.
