This delicious breakfast scramble is filled with protein and can help kickstart a healthy day! This recipe makes 8 bowls (one serving = 250g or 8 oz).
Ingredients
- 1 lb ground turkey sausage
- 1 medium onion, diced
- 2 medium bell peppers, diced
- 16 oz frozen hash browns
- 8 large eggs
- 4 oz shredded cheddar cheese
- 1 tsp salt
- 1 tbsp paprika
- 1 tsp black pepper
Instructions
- Cook hash browns according to bag instructions.
- Cook the ground turkey sausage and diced onion in a large skillet on medium heat.
- Add bell peppers once the sausage has browned and cook another 3-4 minutes.
- Remove sausage and veggie mixture and set aside.
- In a large mixing bowl, add all eggs and seasonings, mix thoroughly and add to large skillet over medium heat.
- Scramble.
- Once complete, add sausage and veggie mixture.
- Once all ingredients, are cooked, mix all ingredients together, divide between 8 bowls and top with shredded cheese.
- Serve with salsa or a side of yogurt.
Notes
SWAP the hash browns for diced roasted sweet potatoes.
