Customizable and delicious breakfast tacos!This recipe makes 8 tacos (one serving = 2 tacos).
Ingredients
- 5 eggs
- 10 egg whites
- 1/2 lb lean turkey sausage
- 8 Carb Balance tortillas
- 4 oz shredded cheddar cheese
- 1/2 onion, diced
- 1 tsp salt
- 1 tsp pepper
- 2 tsp paprika
Instructions
- Cook turkey sausage over medium heat in a large skillet.
- Once cooked through, add onions, lower heat to a low-medium and cook for 3-4 more minutes.
- Whisk together eggs, egg whites, and all seasoning in one bowl.
- Add egg mixture to pan with meat and stir until eggs are cooked through.
- Let eggs cool and divide egg and sausage mixture.
To Serve:
- Scoop 1/8 of the mixture (280 grams) into each small tortilla, add cheese and all preferred toppings (peppers, salsa, cilantro, sour cream, etc.).
- For meal prepping, keep taco mixture separate, heat mixture prior to adding to tortilla, add toppings and enjoy!
