Customizable and delicious breakfast tacos!This recipe makes 8 tacos (one serving = 2 tacos).

Ingredients

  • 5 eggs
  • 10 egg whites
  • 1/2 lb lean turkey sausage
  • 8 Carb Balance tortillas
  • 4 oz shredded cheddar cheese
  • 1/2 onion, diced
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp paprika

Instructions

  1. Cook turkey sausage over medium heat in a large skillet.
  2. Once cooked through, add onions, lower heat to a low-medium and cook for 3-4 more minutes.
  3. Whisk together eggs, egg whites, and all seasoning in one bowl.
  4. Add egg mixture to pan with meat and stir until eggs are cooked through.
  5. Let eggs cool and divide egg and sausage mixture.
To Serve:
  1. Scoop 1/8 of the mixture (280 grams) into each small tortilla, add cheese and all preferred toppings (peppers, salsa, cilantro, sour cream, etc.).
  2. For meal prepping, keep taco mixture separate, heat mixture prior to adding to tortilla, add toppings and enjoy!
