Customizable Egg Bite Recipe (Starbucks Imitation).This recipe makes 12 egg bites (one serving = 3 egg bites).

Ingredients

  • 10 egg whites
  • 6 large eggs
  • 1 cup Low Fat Cottage Cheese
  • 1/4 cup bell pepper, diced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup spinach, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 350F and spray a 12-hole muffin tin with cooking spray.
  2. Whisk together all eggs in one large mixing bowl.
  3. Slowly add cottage cheese, shredded cheese, all seasonings, and any optional veggies and meats.
  4. Whisk vigorously.
  5. Divide egg mixture between muffin holes and fill each muffin hole about 3/4 to the top.
  6. Bake the egg bites for 24-30 minutes (they will be ready once they have risen and are no longer bubbly around the edges).
  7. Allow the egg bites to cool for 20 minutes before eating or packaging for meal prep purposes.
To Serve
  1. Low Carb Option- Three egg bites. Feel free to add a serving of fruit or yogurt to the side!
  2. My preference - Two Egg Bites Open Faced on One Dave's Killer Bread Whole Wheat English Muffin
  3. Feel free to add any preferred cooked meat, seasonings, or veggies you would like!
