This delicious and cold treat is a nutritious option for breakfast or an afternoon snack. This recipe makes two bowls (one serving = 250 g or 8 oz).

Ingredients

  • 1/2 cup blueberries - frozen
  • 1/2 cup strawberries - frozen
  • 1 cup sugar free apple juice
  • 100 grams (1 packet) frozen acai puree - broken into pieces

Instructions

  1. *Freeze your fruit prior to prep*
  2. Blend all fruit, juice, and puree.
  3. With the blender on low, use the tamper to push the frozen fruit down, mixing around as much as possible. If your blender does not have a tamper, stop the blender, mix and push down any clumps and blend again.
  4. Continue to blend on low until smooth, only adding additional liquid when needed.
  5. Divide the smoothie into two bowls and top with all your favorite toppings if eating immediately.
  6. If not eating immediately, freeze smoothie mixture and let thaw for 30 minutes prior to eating, top after thawing.

Notes

Add any preferred toppings - honey, nuts, seeds, fresh fruit, granola, coconut, etc.


I recommend 1 tbsp honey and 1 tbsp white chocolate chips for a sweet summer treat!
