This delicious oatmeal bake can be prepped, chilled, and saved for an easy but hearty morning casserole. This recipe makes 6 servings.
Ingredients
- 2 cups old fashioned oats
- 2 cups blueberries
- 3/4 cup Fairlife milk
- 1 cup unsweetened applesauce
- 1/4 cup chopped walnuts
- 2 large eggs
- 1/4 cup brown sugar
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- In a large mixing bowl, add the oats, milk, applesauce, walnuts, eggs, brown sugar, vanilla, cinnamon, baking powder and salt.
- Stir until thoroughly mixed.
- Spray a 9x13 inch oven safe casserole dish with non-stick cooking spray.
- Spread half the oat mixture in the bottom of the dish.
- Add half of the blueberries as a second layer.
- Top with the remaining oat mixture, carefully smoothing the top.
- Sprinkle on the remaining blueberries (and extra walnuts or cinnamon if preferred).
- Cover the casserole dish with aluminum foil and chill in the refrigerator overnight (minimum five hours).
- Once chilled, remove the dish from the fridge.
- Preheat oven to 350F.
- Bake until set and golden on top, about 32-35 minutes.
- Rest for 5 minutes on a rack on the counter, then slice and serve warm.
- For variety, swap out blueberries for another berry, bite-sized fruit, or chocolate chips.
