This delicious oatmeal bake can be prepped, chilled, and saved for an easy but hearty morning casserole. This recipe makes 6 servings.

Ingredients

  • 2 cups old fashioned oats
  • 2 cups blueberries
  • 3/4 cup Fairlife milk
  • 1 cup unsweetened applesauce
  • 1/4 cup chopped walnuts
  • 2 large eggs
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. In a large mixing bowl, add the oats, milk, applesauce, walnuts, eggs, brown sugar, vanilla, cinnamon, baking powder and salt.
  2. Stir until thoroughly mixed.
  3. Spray a 9x13 inch oven safe casserole dish with non-stick cooking spray.
  4. Spread half the oat mixture in the bottom of the dish.
  5. Add half of the blueberries as a second layer.
  6. Top with the remaining oat mixture, carefully smoothing the top.
  7. Sprinkle on the remaining blueberries (and extra walnuts or cinnamon if preferred).
  8. Cover the casserole dish with aluminum foil and chill in the refrigerator overnight (minimum five hours).
  9. Once chilled, remove the dish from the fridge.
  10. Preheat oven to 350F.
  11. Bake until set and golden on top, about 32-35 minutes.
  12. Rest for 5 minutes on a rack on the counter, then slice and serve warm.
  13. For variety, swap out blueberries for another berry, bite-sized fruit, or chocolate chips.
