This creative take on a McGriddle sandwich reheats very well and offers more protein with quick prep. This recipe makes 24 muffins.
Ingredients
- 2 cup Bisquick (or any complete Pancake mix that just requires water)
- 2 scoops unflavored protein
- 1 1/2 cups of water
- 1 lb lean breakfast sausage
- 1 cup shredded cheddar cheese
- 1 cup egg whites
- 1/2 cup low fat cottage cheese
- 1/2 cup sugar free maple syrup maple syrup
- 1/2 tsp salt
- 1 tsp pepper
- 1 tsp paprika
Instructions
- Preheat oven to 400F and grease a muffin pan.
- In a skillet, brown the breakfast sausage. Drain the grease from the meat and set it aside.
- In a medium-sized mixing bowl, mix the pancake mix, water, egg whites, protein powder, cottage cheese, syrup, salt, pepper, and paprika. Stir in the sausage and cheese.
- Pour the mixture into your muffin pan (filling each muffin hole 2/3 full)
- Bake at 400F for about 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool at least 5-6 minutes before removing from the tin. Serve with extra syrup for dipping.
