This creative take on a McGriddle sandwich reheats very well and offers more protein with quick prep. This recipe makes 24 muffins.

Ingredients

  • 2 cup Bisquick (or any complete Pancake mix that just requires water)
  • 2 scoops unflavored protein
  • 1 1/2 cups of water
  • 1 lb lean breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1 cup egg whites
  • 1/2 cup low fat cottage cheese
  • 1/2 cup sugar free maple syrup maple syrup
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400F and grease a muffin pan.
  2. In a skillet, brown the breakfast sausage. Drain the grease from the meat and set it aside.
  3. In a medium-sized mixing bowl, mix the pancake mix, water, egg whites, protein powder, cottage cheese, syrup, salt, pepper, and paprika. Stir in the sausage and cheese.
  4. Pour the mixture into your muffin pan (filling each muffin hole 2/3 full)
  5. Bake at 400F for about 15-18 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool at least 5-6 minutes before removing from the tin. Serve with extra syrup for dipping.
