This high protein cobbler recipe can be a hearty dessert or warm breakfast! This recipe makes one serving.

Ingredients

  • 1 cup blueberries
  • 1/2 tsp corn starch
  • 1/2 tsp lemon juice
  • 1/3 cup quick oats
  • 1 TB sugar free maple syrup
  • 1 scoop vanilla protein powder
  • 1/2 tsp cinnamon
  • pinch salt
  • 1-2 tbsp water

Instructions

  1. Mix blueberries, lemon juice and corn starch together in a small microwaveable bowl and microwave for 60 seconds.
  2. In a separate bowl, mix together oats, maple syrup, protein powder, cinnamon and salt.
  3. Add water 1/2 tbsp at a time to the topping and mix until a crumbly, thick texture forms.
  4. Layer the oat mixture on top of the warm blueberries and microwave for 60 seconds.
  5. If your crumble needs more time, microwave 10 seconds at a time.
  6. Top with vanilla Greek yogurt, honey, or cinnamon.
