This high protein cobbler recipe can be a hearty dessert or warm breakfast! This recipe makes one serving.
Ingredients
- 1 cup blueberries
- 1/2 tsp corn starch
- 1/2 tsp lemon juice
- 1/3 cup quick oats
- 1 TB sugar free maple syrup
- 1 scoop vanilla protein powder
- 1/2 tsp cinnamon
- pinch salt
- 1-2 tbsp water
Instructions
- Mix blueberries, lemon juice and corn starch together in a small microwaveable bowl and microwave for 60 seconds.
- In a separate bowl, mix together oats, maple syrup, protein powder, cinnamon and salt.
- Add water 1/2 tbsp at a time to the topping and mix until a crumbly, thick texture forms.
- Layer the oat mixture on top of the warm blueberries and microwave for 60 seconds.
- If your crumble needs more time, microwave 10 seconds at a time.
- Top with vanilla Greek yogurt, honey, or cinnamon.
