This meal prep offers a variety of delicious and unique flavor! This recipe makes four servings (one serving = 375g or 1 1/2 cup bowl).

Ingredients

Stir Fry
  • 2 cups cooked white rice
  • 2 tbsp olive oil
  • 2 tbsp ginger, finely grated
  • 2 cloves garlic, minced
  • 2 cups frozen vegetables
  • 1 lb boneless, skinless chicken breasts
Sauce
  • 3 tbsp soy sauce (low sodium)
  • 5 tbsp maple syrup (sugar free)
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • 2 tsp cornstarch

Instructions

  1. Cook rice according to package directions and set aside.
  2. Stir together all sauce ingredients and set aside.
  3. In a medium pan or wok, heat 1 tablespoon of oil over medium heat.
  4. Add the vegetables and cook for 2-3 minutes, or until slightly tender.
  5. Transfer the veggies to a bowl.
  6. Add another tablespoon of oil to the pan.
  7. Add the chicken to the pan, and cook for 5-7 minutes, until cooked through and no longer pink in the middle.
  8. Add the garlic and ginger and cook for one minute.
  9. Add the stir fry sauce to the pan (stir vigorously again), and cook for 1 minute or until thickened.
  10. Evenly divide the rice, veggies and chicken to four plates or meal prep containers.
  11. Spoon extra sauce over the chicken and enjoy!

Notes

Optional: Add 1⁄4 cup cashews or SWAP rice Cauliflower rice
