This meal prep offers a variety of delicious and unique flavor! This recipe makes four servings (one serving = 375g or 1 1/2 cup bowl).
Ingredients
Stir Fry
- 2 cups cooked white rice
- 2 tbsp olive oil
- 2 tbsp ginger, finely grated
- 2 cloves garlic, minced
- 2 cups frozen vegetables
- 1 lb boneless, skinless chicken breasts
Sauce
- 3 tbsp soy sauce (low sodium)
- 5 tbsp maple syrup (sugar free)
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- 2 tsp cornstarch
Instructions
- Cook rice according to package directions and set aside.
- Stir together all sauce ingredients and set aside.
- In a medium pan or wok, heat 1 tablespoon of oil over medium heat.
- Add the vegetables and cook for 2-3 minutes, or until slightly tender.
- Transfer the veggies to a bowl.
- Add another tablespoon of oil to the pan.
- Add the chicken to the pan, and cook for 5-7 minutes, until cooked through and no longer pink in the middle.
- Add the garlic and ginger and cook for one minute.
- Add the stir fry sauce to the pan (stir vigorously again), and cook for 1 minute or until thickened.
- Evenly divide the rice, veggies and chicken to four plates or meal prep containers.
- Spoon extra sauce over the chicken and enjoy!
