Easy Quiche

This easy quiche recipe from TikTok is easy to prep but also very filling and there are so many options for toppings! This recipe makes two servings (one Serving = 1/2 of the quiche).
Ingredients
- 1 large Mission balance tortilla
- 3 large eggs
- 3 TB nonfat cottage cheese
- 2 oz shredded cheddar cheese
Instructions
- Pre-heat oven to 350F.
- Grease a small oven safe pie or circular casserole dish and set aside.
- In a small mixing bowl, whisk together eggs and cottage cheese.
- Lay the tortilla in the oven safe dish and allow the edges to curl up the sides (press down in the corners if needed).
- Pour the egg mixture inside the tortilla and top with cheese (and any other preferred veggies/toppings).
- Cook for 20-23 minutes (egg mixture should be solid, not runny) and enjoy!

Feel free to add any seasonings and veggies!!
