This delicious one pot meal is extremely flavorful and reheats very well. This recipe makes 5 servings (one serving = 350g or 1 1/2 cup).
Ingredients
- 1 lb boneless skinless chicken breasts (cut into 1-inch cubes)
- 2 tbsp olive oil
- 1 tsp pepper
- 4 cups sweet potato, diced
- 2 bell peppers, sliced
- 1 red onion, diced
- 2 tbsp chili powder
- 2 tsp ground cumin
- 1 cup low sodium chicken broth
- 1 tbsp lime zest
- 1 (14 oz) can black beans, drained
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chicken, and cook until no longer pink in the middle (roughly 8-10 minutes).
- Remove the chicken from the pan and set aside.
- Add the sweet potato, bell peppers, red onion, chili powder, cumin, salt, chicken broth, and lime zest.
- Cover and bring to a low heat simmer.
- Simmer (covered) for 15-20 minutes, stirring frequently, until sweet potatoes are soft and cooked through (you should be able to stick a fork through the potatoes once they are done).
- Add more chicken broth if the pan becomes dry at anytime while simmering.
- Add the black beans and cooked chicken, and cook 2-3 minutes until heated through.
- Serve with suggested toppings.
