Sweet Potato and Chicken Skillet

This delicious one pot meal is extremely flavorful and reheats very well. This recipe makes 5 servings (one serving = 350g or 1 1/2 cup).

Ingredients

  • 1 lb boneless skinless chicken breasts (cut into 1-inch cubes)
  • 2 tbsp olive oil
  • 1 tsp pepper
  • 4 cups sweet potato, diced
  • 2 bell peppers, sliced
  • 1 red onion, diced
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 cup low sodium chicken broth
  • 1 tbsp lime zest
  • 1 (14 oz) can black beans, drained

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the chicken, and cook until no longer pink in the middle (roughly 8-10 minutes).
  3. Remove the chicken from the pan and set aside.
  4. Add the sweet potato, bell peppers, red onion, chili powder, cumin, salt, chicken broth, and lime zest.
  5. Cover and bring to a low heat simmer.
  6. Simmer (covered) for 15-20 minutes, stirring frequently, until sweet potatoes are soft and cooked through (you should be able to stick a fork through the potatoes once they are done).
  7. Add more chicken broth if the pan becomes dry at anytime while simmering.
  8. Add the black beans and cooked chicken, and cook 2-3 minutes until heated through.
  9. Serve with suggested toppings.
