Want a deliciously fresh salad that can be meal prepped ahead of time? Without soggy lettuce, this dense bean salad is delicious, high in fiber, and the flavor only grows throughout the week! This recipe makes eight equal servings divided evenly.
Ingredients
- 30 oz chickpeas, rinsed and drained
- 15 oz cannellini beans, rinsed and drained
- 2.5 cups Chicken Tinga
- 1/4 cup red onion, chopped
- 15 oz corn, drained
- 2 cups cherry tomatoes, diced
- 2 oz green chilis, diced
- 4 oz shredded Fiesta cheese
- 6 oz Chipotle Sause (linked)
Instructions
- In a large bowl, add the ingredients for the salad and toss.
- Drizzle the Chipotle dressing over the ingredients and toss again.
- Refrigerate for 45-60 minutes before serving (I prefer to let it sit overnight for the beans and toppings to really soak in the flavor of the dressing).
