This delicious rice bowl is high in protein and fiber and carries a ton of flavor!

Ingredients

  • 2.5 lbs Pork Carnitas
  • 2 cups white rice, cooked
  • 14 oz. corn (frozen or canned)
  • 14 oz. black beans, drained
OPTIONAL Crema
  • 1/2 cup nonfat plain Greek yogurt
  • 1/2 low fat sour cream
  • 2 Tbsp tajin seasoning
  • 2 Tbsp lime juice

Instructions

  1. Cook rice according to package instructions.
  2. Cook pork carnitas according to recipe.
  3. Drain and rinse black beans.
  4. Assemble bowls with evenly divided servings of rice, carnitas, black beans, and corn.
