This delicious rice bowl is high in protein and fiber and carries a ton of flavor!
Ingredients
- 2.5 lbs Pork Carnitas
- 2 cups white rice, cooked
- 14 oz. corn (frozen or canned)
- 14 oz. black beans, drained
OPTIONAL Crema
- 1/2 cup nonfat plain Greek yogurt
- 1/2 low fat sour cream
- 2 Tbsp tajin seasoning
- 2 Tbsp lime juice
Instructions
- Cook rice according to package instructions.
- Cook pork carnitas according to recipe.
- Drain and rinse black beans.
- Assemble bowls with evenly divided servings of rice, carnitas, black beans, and corn.
